Ohmy-- I absolutely LOVE this soup! It makes a lot and keeps well so you can re-heat for awhile. This is taken from a recipe but tweaked a bit to my own tastes. I do not measure much either, so I'll just put it out there and if you wanna try it and need help, lemme know! ;D You'll need: 2 TBSP Olive Oil 3 cloves of Garlic (minced, chopped, whatever) 1 small white onion (chopped) 1 lb of chix (cut up) OR what I like to use (1 package of Hillshire or equivalent--Polska Kielbasa LIght--cause it tastes meatier) 3 cans (standard size) chix broth 1 small box of frozen spinach 2 cans of light red kidney beans (rinse and drain) 1/2 cup of orzo (noodle that looks like rice, best way to describe) Take oil, garlic, and onion and put in a big pot, sautee (stir around) for about 5 minutes. Add sausage/chix to sauteed items and cook together for about another 5 minutes. Put broth and spinach in and bring to a boil. Add beans and orzo and reduce the heat. Go ahead and cover it and let it cook for about another 5 minutes until orzo is semi-soft. You'll need to keep stirring--don't worry if the spinach looks like it's not mixing. It floats. haha Now, I won't say this is the best lookin soup as far as presentation, but add some crumbled feta and a big spoon and dig in! This soup is awesome. It's light, but enough to fill ya. nope! Never tried gumbo--you'll have to post some southern dishes Diva! I'd love to try something that you make a lot down there. And yeah, this recipe is more "healthy" I guess you could say. haha! And believe me, there were quite a few more things on this list that I normally leave off cause it tastes better the way I make it.

ooh, yum diva! I really like any type of beans. haha Those are healthy! Guess you'd have to define how YOU cook them. LOL I'd love to see some of those south recipes diva! Any good ones on how to make crispy chix? ;D

Dunno much about crispy chix.. haha! But you can either eat canned beans (prefer the N.O. style) or hard beans which you would have to soak and boil... i prefer canned myself, but I had the other tonight. pretty good. with smoked sasuage. lol
