* 4 boneless chicken breasts, pounded to 1/2 inch thickness * 1 egg * 1/2 cup milk * seasoned bread crumbs * 8 slices mozzarella cheese, or more * 1 jar (16 oz) spaghetti sauce * Parmesan cheese
PREPARATION: Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.

Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. oh wow, that sounds REALLY good! I've been meaning to add more to this area for recipes that are easy and can be made for 2 people. Need LOTS of those... gettin tired of the wendy's/culvers/pizzahut/mcdonalds/arby's/burgerking diet.

Yea.. Me and Mike eat out a lot, about every time I see him.. It's nice to actually cook together.. But I suspect I will be left alone in the kitchen most of the time I cook (Even though Mike knows how to cook.. Hmmmm.. HE should really be the one cooking:D) I'll post more reciepes when I have time.
